The signature log - Or Noir

FAUCHON Pastry Chef, François Daubinet, has come up with an audacious iced log this year, combining new flavours: caviar, blue vanilla from Reunion Island, iced parfait, lemon caviar ... this unusual creation, in the shape of a vanilla bean, is sure to amaze even the most discerning gourmets.

The blue vanilla of Reunion Island

The iodized taste of caviar blends perfectly with the sweetness and subtlety of Reunion Island blue vanilla. The fragrance of this rare and precious vanilla is obtained after more than 1500 hours of work. It gains in intensity with time and continues to improve with age, like a vintage.

Composition

Outside, a perfect blue vanilla ice-cream from Reunion Island is hand-carved by our Chefs to make each piece unique. It contains a crunchy almond and fleur de sel and an ultra soft biscuit which gives it an incredible texture in the mouth. In its heart, a vanilla ice cream of the meeting is coated with a tangy lemon and lemon caviar marmalade. The caviar balls are to be placed on top of the log, just before tasting
