Grapefruit and Chestnut log

As the nights grow longer and the stars shine brighter, FAUCHON invites you on a cosmic journey to the heart of gourmet delights with its Planète Pamplemousse & Marrons Glacés Yule Log.

This fruity, creamy and crispy creation is an ode to contrasts: in the centre, a compote of pink grapefruit from Corsica, followed by a cream of marrons glacés from Naples, combining the sweetness of Bourbon vanilla with chestnut slivers sublimated by a touch of cognac. The whole is enveloped in a Madagascar vanilla ganache, resting on a buckwheat Breton shortbread.

A combination of boldness and expertise

To mark the festive season, FAUCHON is presenting a deliciously flavoursome log in a unique, made-to-measure case.

Because FAUCHON has become an expert at combining creativity and craftsmanship, they chose to work with Gaël Gaborel, whose mission was to create a handmade globe with FAUCHON constellations!

A four-handed log

As he does every year, Executive Chef Sébastien Monceaux wanted to combine creativity and craftsmanship by working with a French artist. This year, he was particularly moved by the exceptional work of Gaël Gaborel and his hand-crafted globes, which for him evoke the meticulousness and passion needed to make the log. Inspired by the FAUCHON universe, the artist has painted original, gourmet constellations for an exceptional objet d'art.

Ingredients & Allergens

It's a fruity, creamy and crunchy creation, distinguished by its harmonious contrasts. It is composed of the following elements:

1. The centre:
- A compote of grapefruit, adding a fruity, tangy note.

2. The cream:
- A cream of marrons glacés from Naples, combined with the sweetness of Bourbon vanilla.
- Chips of marrons add a crunchy texture.
- The whole is enhanced by a delicate touch of cognac.

3. The outer shell:
- A puff pastry of feuilletine and Sarazin, adding crispness and lightness.

4. The finish:
- A ganache with Madagascar vanilla, adding creaminess and a richness of flavour.
- The whole is set on a Breton shortbread with Sarazin, which provides a tasty, slightly shortbread base.

The Signature Log can be stored at the bottom of the fridge at a temperature of between 0 and 4 degrees Celsius and enjoyed within 2 days.

Remove 15 minutes before serving.

Cut with a knife dipped in hot water to obtain smooth slices.

The Log will be placed inside a FAUCHON box (18x18x18 cm) and then in a rectangular FAUCHON Prestige bag.
