Candied chestnuts, with their delicate aroma and subtle taste, pair harmoniously with fine teas, refined coffees and even certain selected alcohols. The essence of our art lies in the ritual of candied under tulle. Wrapped two by two in tulle muslin, the chestnuts are candied for 7 to 10 days in a syrup composed of sugar, glucose syrup, and Bourbon vanilla from Madagascar. During cooking, the temperature is gradually lowered to allow the syrup to delicately penetrate the heart of the fruit while driving out the water. Once candied, the chestnuts are covered with a thin film of translucent and satiny icing sugar syrup, thus obtaining a perfect glaze.
