Caviar from Aquitaine

Each of our caviars is carefully sourced from fish farms in Aquitaine, where the sturgeons are raised with ancestral know-how and particular attention paid to their well-being.

Local producers, with whom we work closely, perpetuate traditional production methods, guaranteeing exceptional quality. Sébastien Monceaux, our Executive Chef, has selected these exceptional products to celebrate French excellence and the unique know-how of our suppliers.

FAUCHON Baeri caviar, matured for between 3 and 8 months, is a real explosion of fruity and iodized flavors. Its shiny grain, combining roundness and firmness, is the fruit of meticulous and respectful work. FAUCHON Osciètre caviar, from an exclusive production of Gueldenstaedtii sturgeon, offers a harmonious combination of marine flavors and notes of dried fruits. Its firm grains with golden hues are the result of careful breeding and precise maturation. Finally, Beluga caviar, recognized as one of the most prestigious selections in the world, is distinguished by its very large gray grains, firm and delicate, revealing subtle flavors and an incomparable length in the mouth.

Seafood Rillettes

Since 1886, FAUCHON has embodied the excellence of French gastronomy. FAUCHON seafood rillettes are the fruit of artisanal know-how, meticulously passed down through the generations. By highlighting the authenticity of the Breton terroir, FAUCHON carefully selects the raw materials: fish and shellfish caught by coastal boats in the North-East Atlantic.

Respectful of the seasons and local traditions, these ingredients are transported through short circuits, guaranteeing freshness and exceptional flavors. The recipes, prepared with particular attention, brown, reduce and simmer under the expertise of FAUCHON artisans, thus revealing unique and refined tastes.

The rillettes are made in a cannery on a small island in southern Brittany. This unspoiled territory, with its enchanting and mystical landscapes, is the cradle of centuries-old culinary traditions. The teams, made up of women and men proud of their roots, create iconic recipes inspired by France's rich gastronomic heritage.

The art of candied chestnuts

Gastronomic delights are enchanting journeys through refined flavors and delectable textures. Marron glacés are distinguished by their artisanal perfection and commitment to quality. Selected from the finest fruits in Naples, they are sorted for their round shape and regular size. With more fruit than sugar, they contain no additives, preservatives, GMOs, gluten or fat.


Each candied chestnut, accompanied by subtle Bourbon vanilla from Madagascar, embodies a symphony of flavors, testifying to our commitment to excellence and gastronomic tradition.
By delicately uncovering the heart of the chestnut, filled with syrup, one can appreciate its freshness and quality. Candied chestnuts, with their delicate aroma and subtle taste, pair harmoniously with fine teas, refined coffees and even certain selected alcohols. The essence of our art lies in the ritual of candied under tulle. Wrapped two by two in tulle muslin, the chestnuts are candied for 7 to 10 days in a syrup composed of sugar, glucose syrup, and Bourbon vanilla from Madagascar. During cooking, the temperature is gradually lowered to allow the syrup to delicately penetrate the heart of the fruit while driving out the water. Once candied, the chestnuts are covered with a thin film of translucent and satiny icing sugar syrup, thus obtaining a perfect glaze.

Its name "Treasure of Tradition" is not an empty phrase. Each chestnut is taken care of with the greatest care, and to preserve their perfection, we share valuable conservation tips. Opt for our candied chestnuts carefully folded in elegant "Gold" aluminum foil, or discover our chestnuts in syrup, equivalent in artisanal quality.
