  • 6 teaspoonsof tea"One Christmas Eve"
  • 70 cl mineral water
  • 40 cl apple juice
  • 40 cll emon juice
  • 30 cl homemade syrup (prepared with water, cane sugar, and a cinnamon stick)
  • 5 cl egg white
  • 24 cl of Fruitillant or of Champagne FAUCHON
  • 1 lemon (for the dried slices)
  • Cinnamon powder (for finishing)
  • Gold leaf (optional, for decoration)

Preparation

Step 1: Preparation to be carried out the day before

  • Steep 6 teaspoons of “Un soir de Noël” tea in 70 cl of mineral water at 75°C for 10 minutes .
  • Let the infusion cool, then place it in the refrigerator for 4 to 5 hours .

Step 2: Preparation a few hours before

  • Cut a lemon into thin slices 3 mm thick .
  • Spread them out on a sheet of baking paper and place them in the oven at 55°C to dehydrate them. This process can take between 2 and 6 hours depending on the thickness and water content of the slices.
  • Turn the slices every hour for even dehydration, then set aside in a dry place.

Step 3: Preparing the cocktail

  • Pour into a shaker:
    • 130 ml of cold brewed tea ,
    • 40 ml of apple juice ,
    • 40 ml lemon juice ,
    • 30 ml of homemade syrup (water, cane sugar, and cinnamon).
  • Add 5 ml of egg white , then perform a dry shake (without ice cubes) to emulsify.
  • Add ice cubes to the shaker and shake a second time.
  • Strain twice before serving.

Step 4: Assembly and finishing

  • Pour the mixture into a glass, then top up with 40 ml of Fruitillant or FAUCHON Champagne .
  • Place a slice of dried lemon on top, add a gold leaf , and sprinkle lightly with cinnamon.

Preparing black tea is an art. In order to appreciate all the flavors and fragrances that emanate from this plant, black tea preparation requires observing a few rules.
First, bring water to the boil while placing loose tea or tea bags in a container or in your favorite cup. Then pour the boiling water over the tea and leave to infuse for the time indicated.
