Which wine to choose with foie gras?

Foie gras pairs well with very different wines. Although it is traditionally served with white wine , especially with a soft white , a fruity wine or a sweet wine , it can also be served with red wine or even with champagne!

A sweet wine like Sauternes white wine

Pairing foie gras with a sweet wine or a fruity wine is the most common. Indeed, the aromas of these two products sublimate and combine perfectly. It is preferable to choose a white wine that is not too heavy in sugar, aged a few years. Sauternes white wine is perfectly suitable. With this type of association, it is possible to serve foie gras as a starter, but also as an entremets, just before dessert.

A sweet white wine or a dry white wine

Foie gras pairs perfectly with a sweet white wine , especially if it is served with a sweet condiment such as onion or fig jam. Among the sweet whites that pair best with foie gras are Bergerac, Côtes de Gascogne, Jurançon or Gaillac, but also Alsace wines such as Pinot Gris or Gewurztraminer. Rarer and sometimes surprising, the association of foie gras with dry white wine can be interesting. In this case, you should avoid wines with too much acidity.

A red wine

Foie gras is increasingly served with red wine. This combination allows the taste buds not to be overloaded when the foie gras is served as a starter, while revealing its flavors. In this case, it is advisable to opt for a great red wine such as Saint Emilion or Pommerol, aged several years. On the other hand, wines that are too green and too light should be avoided.

A champagne

Foie gras can also be served with champagne. The choice of champagne varies depending on the type of foie gras but also on its accompaniment. With a goose foie gras, it is advisable to serve a fresh and light champagne while with a duck foie gras, it is preferable to opt for a more powerful champagne. On the other hand, if the foie gras is accompanied by a sweet condiment, preferably pair it with a sweet champagne. The champagne can also be replaced by a Crémant de Bourgogne or a Crémant de Limoux for example.
