Bitter Orange, that surprising fruit that makes the taste buds juggle between bitterness and sweetness. Fauchon's handcrafted recipe softens the ziste, transforming it into a culinary delight. The oranges are picked when just ripe, to preserve and intensify the aromas and scents of this citrus fruit. To enhance the quality of the fruit, Fauchon perpetuates the tradition of slow-cooking small quantities with cane sugar in copper cauldrons. This ancestral method brings out the caramelized, honeyed flavors that make Fauchon jams so distinctive.
