The stalks are meticulously selected when just ripe to preserve and intensify their aromas and scents. To enhance the quality of the ingredients, Fauchon perpetuates the tradition of slow-cooking small quantities with cane sugar in copper cauldrons. This ancestral method brings out the caramelized, honeyed flavors that are the hallmark of Fauchon jams.
