Calisson from Aix en Provence

A specialty of Aix en Provence, the calisson is made from a mixture of finely ground sweet almonds, candied melon and orange peel, all topped with a wafer leaf and white icing. In pure respect of the traditional recipe, this calisson offers a double texture; the crunchiness of the icing and the softness of the dough, as well as a perfect balance between the aromas of almond, melon and orange peel.
